Called “Uchiwa ebi” because the body is flat and the head is a shape of fan.  Fan lobsters are found stuck in the net during flounder fishing. Because it is too troublesome to take them out,  no one ate or sold them in the past days. Then, fishermen started to eat them as sashimi, boil in salty water, or put in miso soup and now its delicious taste has made it one of the high-quality ingredients.
